/></p><p>&nbsp;</p><p>竹笋生长于山里,根植于泥土之中。尤其是冬笋和春笋,都是深藏在地下,平常人,即便来到竹林里,也根本是找不到的。</p><p>&nbsp;</p><p>我去过朋友的老家,位于安徽广德天目山余脉脚下的一个村落,屋后就是叠嶂的重山竹林。朋友说,他虽然打小就生长在竹林边,可是,如何能挖到冬笋和初春的春笋,他现在依然不得要领。</p><p>&nbsp;</p><p>我知道,这些冬笋,肯定是他父亲上山挖的。之前多年,我已经多次吃过老人家挖的冬笋了。这个时节,即便是在安徽广德的农贸市场上,也很难能买到本地的春笋。物以稀为贵,广德当地独特的自然环境,使得本地出土的竹笋,格外好吃,自然也一笋难求。</p><p /></p><p>&nbsp;</p><p>到了清明前的一段时间,雨水后,从土里冒出来的春笋,就开始多起来了。价格也便宜,一块钱两斤的时候,也经常能遇到。在安徽工作的两年多,每年春天,我都会买两三百斤的新鲜竹笋,自己煮熟后,晾晒成笋干。</p><p>&nbsp;</p><p>盛期时的竹笋,能食用的时间还是很短的。清明后一个月,竹笋就老了,渐成竹子的质地了,自然也就无法食用了。</p><p /></p><p>&nbsp;</p><p>在江南工作的几年里,清明前后的四五十天,我的餐桌上,每天都少不了竹笋。而竹笋炒肉,做法简单,味道却又恰到好处,最得我的喜爱。</p><p>&nbsp;</p><p>竹笋表面洗掉泥土,剥掉外面包裹的叶子后,用刀子削掉外面的硬皮。从中间剖开,切成片,开水下锅,焯水,过凉后沥水。</p><p>&nbsp;</p><p>炒锅加热,比平常炒菜多一半的植物油(窃以为,菜籽油才是竹笋的最佳伴侣),把五花肉煸炒出油后,加葱花炝锅。愿意吃辣的,可以加一两个切碎的干辣椒。倒入沥干水分的竹笋,大火迅速翻炒至变色后,稍加一点点清水,转小火,盖锅煮半分钟左右。滴几滴白醋后,再翻炒几下,关火。撒一点葱花或者香菜,装盘即可。</p><p /></p><p>&nbsp;</p><p>而我还会用竹笋包饺子,蒸汤面包子,则是当地人都不常做的美食。</p><p>&nbsp;</p><p>新鲜的竹笋和少量的香菇,一起切成沫状。加猪肉馅一起搅拌均匀。附以香油蚝油调味,加适量的海米。无论是汤面包还是饺子,入口后,馥郁的山野清香,裹挟着强烈的味蕾刺激,周身的每一个细胞,都充盈着春天的气息。此中快意,世间少有。</p><p 谢谢美女竹笋切沫,真的是一件耗心力的事,如果不是老饕,一般人,真的不屑于做这样的事
但是,竹笋最妙的就是,我自身最纯粹的矗立,其他食材的符合,都改变不了,我傲立春天的气息

焯水后,清水浸泡一天,口感更柔和一些。
但是,竹笋的气息,竹笋所代表的春天的味道,也就荡然无存了

咱们这边清明节时候的笋还是五六块钱一斤,很喜欢吃,凉拌也好吃,有时候会焯水后放冰箱里面冷冻,是不是不如晒干了好?
